Italian Oil Cake

Recipe provided by Gale S.. "A famliy favorite that we just have to pass on!! Give it a try, you will be wanting more!"

Ingredients

  • 2 C. flour
  • 1 C. sugar
  • ¼ C. oil
  • 2 t. baking power
  • ¼ t. salt
  • 2 eggs
  • 1 C. milk
  • Vanilla or lemon juice
  • ½ C. butter or margarine
  • 1 C. brown sugar (packed)
  • ¼ C. milk
  • 1 ¾ to 2 C. confectioners’ sugar

Directions

  1. For the cake:
  2. Stir ingredients in bowl, by hand
  3. Bake @ 350° for approx. 30 minutes
  4. Easy Penuche Frosting:
  5. Melt butter in saucepan. Add brown sugar. Boil over low heat for 2 min., stirring constantly. Stir in milk. Bring to a boil, stirring constantly. Cool to lukewarm. Add confectioners’ sugar. Beat until thick enough to spread. If too thick add a little more water or milk.
