Recipe provided by Billie P.. "This is the best blueberry coffee cake I have ever tasted. Moist and super easy to make. Try some with a hot cup of coffee!"


  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/2 tsp cinnamon
  • 1/4 cup butter
  • 2 cups flour
  • 3/4 cup sugar
  • 1/4 cup shortening or butter
  • 3/4 cup milk
  • 1 egg
  • 2 1/2 tsp baking power
  • 3/4 tsp salt
  • 1 tsp cinnamon
  • 2 cups fresh or frozen blueberries (thawed & drained)


  1. Heat oven to 375 and grease bottom and sides of 9x3" springform pan or 9" pan with shortening or cooking spray.
  2. In a small bowl mix brown sugar, 1/3 flour and 1/2 tsp cinnamon.
  3. Cut in the 1/4 butter with a fork until crumbly. Set aside.
  4. In a large bowl stir together all other ingredients except blueberries and beat with a spoon.
  5. Fold in the blueberries.
  6. Spread batter in the pan and sprinkle on the topping.
  7. Bake 45 to 50 minutes or until toothpick comes out clean. Cool 10 minutes and remove from pan.
  8. Make vanilla glaze....
  9. In a small bowl mix 1/2 cup powdered sugar, 1/4 tsp vanilla and 1 to t 1/2 tsp hot water until smooth. Drizzle over warm coffee cake.
